My Book Club is having a Dip Party. Instead of our regularly scheduled book chat we are each bringing our favorite dip and recipe to share. Since we are really into Dip season- (starting with tailgating Saturdays) and fast approaching High Dip Holidays with the Trifecta of Dipping Thanksgiving/Christmas/New Years and Bowl Games...well there really aren't enough days for all the dips out there. Time to refresh the regular repertoire...my dilemma is which dip should I make and take? Something tried and true or a new found try me dip? How many ways can you use cream cheese?
Do you have any suggestions? What's your favorite Dip? Recipes you'd like to share? Send them on over....I'll be sure to share the fun and recipes with all of you after the last chip is dipped...(or cracker or pita or bread-stick or crudites....it's endless....)
My favorite dip is the one introduced to me by Steve's Aunt Melinda: Ugly Dip. I know it doesn't sound appetizing, but it is YUMMY:
2 c. shredded cheddar
6 TBSP mayonnaise
2 c. chopped pecans
6 green onions, chopped
1 jar hot pepper jelly or preserves
Combine first 4 ingredients in pie plate. Smooth jelly over top. Serve chilled with crackers.

Here's a good Weight Watcher's Dip:
1 10 oz package of frozen whole kernel corn
1 1/2 cups refrigerated fresh salsa
3/4 cup Weight Watchers Reduced Fat Shredded Mexican Style Cheese
2 Tbsp. chopped green onions
Microwave frozen corn according to package directions; drain
Combine corn and salsa in microwave safe 9" pie plate. Cover with plastic wrap; vent. Microwave on HIGH 2 minutes or until bubbly.
Sprinkle cheese over corn mixture; cover and let stand 5 minutes or until cheese melts. Top with chopped onions!
Delicious!
